Tapas are small appetizers, canapes, or finger food that originated in Spain. They can be anything from a little dish of olives or nuts to much more elaborate hot or cold hors d’oeuvres. In Spain they are often served to bar patrons who consume them standing up at a bar along with cocktails or wine. Spaniards typically have their evening meal very late, and tapas serve to tide one over from the cocktail hour until dinner.
Many restaurants, in Spain and elsewhere, now specialize in tapas, and have complete menus planned around a myriad of choices for the customer to enjoy. My favorite way to enjoy tapas is to make an entire meal of them.
