Using fresh tomatoes in a pasta that is perfect for our warm summer days is a great idea for those times when you don’t want to heat up the kitchen. The fresh herbs in this recipe really set off the wonderful flavor of the tomatoes.

Sunday Night Pasta With Juniper Berry Balsamic
Ingredients Serves 4-6
1 lb pasta
10 gloves of garlic, diced
3 T extra virgin olive oil (suggested-Leccino)
3/4 cup fresh basil, diced
2 T. each mint and chives, minced
1T. fresh marjoram or 1/4 tsp dried
7 large fresh tomatoes, chopped
Juniper Berry Balsamic
Cook pasta according to directions. Heat Leccino EVOO in skillet with the garlic. Cook slowly to release the sweetness (about 15 minutes). Add herbs to oil to release the flavor. Drain pasta and toss with sauce and chopped tomatoes. Grate parmesan cheese with vegetable peeler. Toss pasta with the cheese and a drizzle of Juniper Berry Balsamic Condimento. Serve hot.
