Cilantro Roasted Onion Olive Oil

Cilantro is also known as coriander, and is used often in Thai, Mexican, Chinese, Middle Eastern, and many other cuisines.  Surprisingly, cilantro has some medicinal uses as well.  It is loaded with anti oxidants, has been used to treat type 2 diabetes, can lower cholesterol, and has been used as a folk remedy to treat anxiety and insomnia!  And here is an interesting fact:  mice fed cilantro are less disposed to getting head lice. How about that?

Love cilantro?  Hate it?  It turns out there is a genetic disposition to liking it or not.  If you are wired not to care for the taste of cilantro,  it may taste soapy to you.  If you like it, you will not be aware of any such thing.  As for me, fortunately my brain thinks cilantro is yummy, so I use it as often as possible in my cooking.  I also find our Cilantro Roasted Onion olive oil very useful as a flavor enhancer when I am sauteeing vegetables to add to other finished dishes.
