Ginger Pear Pumpkin Soup

This is the season for Pumpkin Pie Spiced Everything, isn’t it?  Marisolio has a wonderful Pumpkin Pie Spiced Balsamic that is a must for your cooking this autumn.  Delicate nutmeg, allspice and cinnamon perfume this festive white balsamic.  This product is a seasonal one for us, meaning that we have it in fall and into winter, but not the rest of the year.

It is terrific drizzled over butternut squash or as a glaze for pork chops, but my favorite way to use it is in Ginger Pear Pumpkin Soup.   Try this on the next cool fall day, and I don’t think you will be disappointed.

Ginger Pear Pumpkin Soup

4 T. butter
1 onion, minced
1 cup celery, diced
1 cup carrot, diced
2 pears, diced
2 15 oz cans pureed pumpkin
1 tsp grated fresh ginger
2 to 3 T. Marisolio Pumpkin Pie Spiced Balsamic
3 cups or more chicken broth
salt and pepper to taste
1 cup heavy cream

Melt butter, saute onion, celery, carrot and pears.  When veggies soften (3 minutes or so), add Pumpkin Pie Spiced Balsamic and chicken broth.  Transfer to 5-7 quart slow cooker.  Cook on high 3 hours or low 5-6 hours.   Puree with an immersion blender.  Add cream and more broth if desired.  Season to taste with salt and pepper.  Reheat to serving temperature.
