Koroneiki Extra Virgin Olive Oil
Grilled Marinated Eggplant: Heat the grilling device of your choice. Mix 1/4 cup Marisolio Koroneiki olive oil with 1/4 cup of Marisolio Neapolitan balsamic. Add kosher salt and pepper to taste. Brush eggplant slices with olive oil and grill 3 to 6 minutes per side. Lay grilled eggplant slices in marinade and use spoon to cover slices well with liquid. Cover and let marinate at room temperature up to 2 hours.
Dark Toasted Sesame Oil
Simple Stir Fry: Protein- 1/2 to 1 pound chicken, pork or steak, chopped uniformly. Vegetables- 1 pound assorted fresh vegetables, sliced uniformly. Aromatics- 1 tablespoon total minced ginger, garlic, and shallots. Herbs- 1 tablespoon minced parsley or cilantro or basil. Over high heat, saute protein in 2 tablespoons vegetable oil. Remove meat from pan when browned. Add vegetables to hot pan and saute until nearly done. Add aromatics and saute one minute. Put protein back in pan. Stir fry sauce- 1 cup broth, 2 tablespoons soy sauce, 1 tablespoon Marisolio Dark Roasted Sesame Oil, 1 tablespoon each sugar and rice wine vinegar. Combine and add to skillet. Cook one minute until heated through, add herbs and serve.
Marisolio’s Garlic Oil is such a staple in my kitchen. I use it to saute absolutely everything. For a wonderful flavor impact, try it in a heart warming Black Bean Soup– Soak 2 cups black beans over night in water to cover. Drain beans, place in a large pot and cover with 8 cups water. Add one ham hock and cook until beans are soft. Saute 2 cups diced onion in 3 tablespoons Marisolio Garlic oil and add to soup. Cook an additional 3 hours on simmer. Remove ham hock and take meat from bone. Add meat back into soup. Add 1/2 cup dry sherry and bring soup up to temperature. Garnish with sour cream, grated cheese and parsley.
