It is just the middle of February and I am already starting to think green.  I don’t know which I am looking forward to more, our town’s St. Patrick’s Day celebration or the onset of spring.  Whatever the impetus, I am dreaming of green food, guacamole in particular.  I would like to share a recipe for a classic guacamole, spiced up with one of Marisolio’s popular olive oils: Baklouti Green Chili!  This oil is a staple in my kitchen.  A few teaspoons can add a lot of flavor to just about any dish that needs a bit of kick or brightening of flavor.  It is a brilliant addition to guacamole.  None of that chopping tiny jalapenos and getting the juice in your eyes.

Guacamole a la Marisolio

3 avocados, peeled, pitted and mashed
1 lime, juiced
1 tsp salt
1/2 cup diced onion
3 T. fresh cilantro, minced
3 Roma tomatoes, diced
1 tsp. minced garlic
1 tsp Marisolio Baklouti Green Chili Olive Oil (or more to taste)
1 pinch Cayenne red pepper
In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, garlic, and Marisolio Baklouti Green Chili Olive Oil. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
